Black Bean Soup

This is a quick yummy soup the warms the body any time of the year.

You’ll need:

1 Tbsp. olive oil – ½ cup chopped onion – 1-3 cloves garlic, minced – Two 15 ounce cans of organic black beans, drained and rinsed (or make your own real easy) – One 14.5 ounce of organic diced tomatoes with juice – 4 cups organic vegetable stock – 1 bay leaf – 2 Tbsp. homemade taco seasoning – 1Tbsp. Fresh lime juice – ½ cup vegan sour cream (WayFare brand is great) – 1 cup fresh cilantro, chopped

Heat oil in large saucepan over medium heat and sauté onion and garlic until garlic is tender, about 2 minutes. Stir in the beans, tomatoes, vegetable stock, bay leaf, taco seasoning, and salt. Bring to a boil. Reduce to a simmer and cook, covered, for 20 minutes, stirring occasionally.  Remove soup from heat. Discard the bay leaf. Stir in the lime juice and cayenne. Serve immediately , garnish with sour cream and cilantro (optional).

Taco Seasoning – 3 Tbsp. chili powder-1 tsp. garlic powder – 1 tsp. onion powder – ¼ tsp. cayenne – 2 tsp. paprika – 2 Tbsp. ground cumin – 1 tsp. sea salt. Mix together in a small bowl. Store in an airtight container
