Hungarian Cabbage and Noodles

2 cups thinly sliced onions – 1/4 cup Earth Balance – 1 1/2 Tbs Paprika – 8 cups finely shredded cabbage – 2 tsp salt – 12oz package of fine or medium egg free noodles

Cook onions until golden brown (about 15 minutes). Add paprika. Stir in cabbage and add salt. Cook on low heat for 40 to 60 minutes, stirring occasionally, until cabbage is very soft and brown. Add cooked noodles (al dente) and toss with cabbage mixture. Serve warm with a little vegan sour cream if you like.
